This book is a comprehensive journey through the world of spices and herbs with personal connections and histories interjected by the author. If you are looking for a boring book on spices like all the others don't buy this. If you are looking to learn how to listen to the food and let the spices take you on a journey around the world. This books is packed with information on how spices can lift your palate to new appreciations and has some helpful recipes and guidelines for beginners as well.

Beautiful book with a really in depth look at all kinds of spices, sauces and marinades from around the world. I love how it's broken down by region and goes into detail about each spice and pairing. I'm also a big fan of how each sauce or marinade has recommended proteins/veggies that really allows for creativity and flexibility in flavoring your food.Must buy for cooks looking to spice it up in the kitchen!

I've only been able to skim this so far, and already learned loads! I shouldn't be adding spices to my dishes directly from the container shaker? Who knew? I am excited to start using my pestle and mortar and doing some as-needed grinding, too. The accompanying images in the book are just stunning, and inspiring. No more pre-marinated foods for me. Highly recommended!

I learned a lot of information I didn't know before reading this book. I was so enchanted I couldn't put it down, until I got to the recipe section. Filled with wonderful information on many different spices. I loved the section on how to treat your spices. I always kept mine above the stove (Mom and Granny did the same.) Now I know better! Used this in a class I was teaching my garden group. Great reference book on spices, what they are and how to treat them.

Nothing makes me crave travel and adventure like the promise of good food (seriously, if you want me to climb a thing or walk a place, tell me about the noms), and this book perfectly spurs that craving. Gifting to my culinary friends, who all know that there is no greater crime against food and life than lack of spice and adventure. Also...how did I make it this far in life without Grains of Paradise?!

I love how the book is organized, breaking the chapters down to include a description of the spices from the region, followed by recipes which utilize these spices. When Mark writes another book, I hope it's after he spends some time in Peru and learns all the wonderful spices and dishes it has to offer!

This is an excellent book. The Author was doing a local book signing and I also had the pleasure of meeting him. Thanks, I love it.
